What if guest numbers change after confirmation?

The invoice bills the confirmed final count as the floor; increases after the cutoff bill at the same per-head rate. State the cutoff date at booking and repeat it on the invoice.

Deposit and balance timing?

Deposit at booking holds the date; balance either due before the event (weddings, standard) or net-7 after (corporate accounts). Pick per client type, and put the policy on the invoice.
